Make sure that she concludes that it was an incredible date, which requires you to talk about the right topics (such as politics), choosing the most expensive item, gifting her a preferred present (such as books, choose the highes value) and answering het personal question correctly. This should result in them facing eachother where she says that she had an incredible time.
If you see a CG where she is not facing him telling him the date was okay, than this is not considered as a succesful date

Maybe this is a dumb question but.. Isn't there a way to interact with a character you have a current quest in the school more than one time at day? Like in the rachel quest when MC change her exam, i need to wait one day to tell her i'm already done it?

The original version had the same mechanic. You don't have to wait a whole day, you can just skip the time (using Spend Time feature in the quick menu) for 20+ hours.
