Hi, I'm a game developer. I have seen a lot of monster-genre games and realized that the slime monster genre has relatively few games.
I mean, a slime monster has features like shapeshifting, tentacles, and transparent skin. It's a lot of tags.

So I was thinking of making a game using slimes.

1) Vanilla Visual Novel, in which slime is an imposer in the family of four females. medium risk-medium work-good reward
2) 3d RPG game where you play as a slime in a fantasy world. low risk-High work-good reward
3) 2d RPG game where you breed slime girls and extract ingredients to make potions. High risk-medium work-low reward

A good game in the fantasy genre always works. As you mentioned, it has low risk. As someone who loves fantasy worlds, I would prefer that game.

Imo, making a good RPG is already a difficult endeavor for large studios, but making an adult RPG is even harder, because a lot of the mechanics don't make as much sense. E.g., 'grinding' in regular RPG's is fine because you can heavily change up your approach from your party comp, your gear, etc. and there's always a variety of enemies and how they react. What ends up happening in adult RPGs, though, is a lot pointless grinding or janky mechanics that haven't been properly balanced. Alternatively you end up making a mostly vanilla RPG and throw in adult scenes and interactions here and there.

My personal opinion aside, you should make what you think you'd enjoy making the most.

Man... I love Adult Visual Novels. But I think the answer depends on you. Do whatever you want to do. Don't force yourself to do things you don't want to do. I mean - for example - if you hate NTR and/or incest, just stay away from these kind of content. ;)
