I can answer that: Dependability.
A game requires tons of art, and most artists are only looking for one time commissions, take weeks to complete one piece, and take long rest between drawings. This makes them unreliable for long term collaborations.
Ai in other hand, can generate as much art as we need, in a relatively consistent style no matter who is operating it, and doesn't ghost the creators midway, even when the project takes years to complete.
Ideally an artist using AI to speed up work and pump out tons of drawings would be the best fit, but from what I've seen, most artists don't even have the hardware to run AI, let alone the software skills to set it up and adjust for the correct style.
