Sure, except it's not as likely to spread into people's regular sex life as other fetishes.

It has almost everything to do with taboo than anything else. Like 2 regular people having sex is normal everyday stuff, it happens in the real world. But incest is almost a complet fantasy(with exceptions to rare cases). It's why it's becoming more comon in porn in general. For most people it's not the mom or sister things that's actually exciting, it's the forbidden love aspect that drives them. Same reason why student teacher sex is big in porn.

Thanks. Yeah I know it only counts the tags and not the in-game content so it isn't even close to being 100% accuarate but I find it interesting as a general idea and noticing things like Rape being more used than Romance or Incest really calls my attention.

And an interesting exception about it is that Incest is a "money making" tag for some devs so they may forget about a lot of tags but Incest won't be one of them, and since Incest is so popular among players it doesn't take too long before an incest game without the tag gets reported, so I have much more faith in the stats for that tag in particular.

Oh yeah definitely, incest is a fucking cottage industry. If you're developing any type of regular VN or sandbox Renpy game you might as well check that base and throw some family fun in there even if it doesn't make a whole lot of sense story-wise.
Plus it's the ideal setup to have the usual arrangement of busty older woman, sporty/bitchy type and young innocent girl instantly available without need for an explanation or a buildup.

A lot of it is confirmation bias too of course and depends on your personal preferences.
I see a lot of incest because I play a lot of Renpy sandbox stuff. If I was mostly interested in Japanese RPGM titles I'd probably complain that 80% of all games have female protagonists that get raped and humiliated every 5 minutes.

Unfortunately, most of the best titles in this site feature incest, in one form or another. I'm not into it either but I guess I can consider myself lucky because I'm completely apathetic towards it. I can understand where your frustration comes from, though. There is nothing much to do, either you deal with it or avoid such titles, as others said already there are a lot of incest-free games available here.
