Default values are pretty good, but on unity (for instance) the wrong settings would mean that you need to manually rotate the object to face the right direction, and scale them appropriately. Not a big deal, but it's easier if you set up the fbx before exporting to avoid extra steps elsewhere.

I think there's reason to have both if you're doing a lot of importing/exporting. I find BetterFBX to be a lot more consistent overall, though.You can use the core Blender exporter to export all the FBXs you want. The dialogue window is self explanatory and you don't need a 3rd party addon for it.
