I mean... VR games sometimes have desktop versions, so I'm not surprised people are checking that out

This isn't some alien tech. Usually all you need to do is create a mouse and keyboard control schem

I have PCVR, using valve index.
The game doesn't boot up in SteamVR for me, any other game does though.
It launches without using SteamVR, is there something I need make sure it uses SteamVR or something?

On Quest 3 game froze at eating the leftover spoiled meat dare. Up to that point, seems pretty good. Graphics and mechanics work well. Scrubbed plates didn't get completely clean. The time spent getting that far, I haven't tried it again.
