I was wondering if there was any way to either edit variables in game, similar to how you can edit a variable in the console for renpy games. If not that, is there a way you can edit save files? Usually I try to edit variables to make games less grindy, to cut straight to the content we started playing for, but I don't know how to do that with unity games

You can use a memory editor. Quite a lot of Unity games also provide ingame cheat systems (love of magic does, certainly)
