I love the way we have play in the game called Cure My Addiction. There are set triggers for various scenes which appears as milestone. No matter what the order of various subplots.

Love and Sex, Second Base is going this way. It started mostly as a dating sim and it mostly still is, but they have a tracker now with hints indicating how to reach specific content with each girl in a very open world.

If you don't need an open world, you can check Hotel Harem, which has different plots for each girl, but you can never miss a sexy scene, even though you don't feel too constrained in your choices.
