Are there games where npc believe they can control the mc only to have ow shits moments when they realize how much better he is at breaking people then day are?
Ofcourse the mc will break them and turn them into willing slave's at the end of the journey.

You could try the second story (Slaver Path) in Four Elements Trainer. That is pretty close to what you are looking for. You are forced into the army to help the villian girl win the war and she treats you like a slave, eventually you become so important in the war that she needs to do whatever she can to keep you happy pretty much becoming your slave in the process.
