So I'm planning on developing a game to post on this site. It's gonna be text based. I'm just curious as to what is an over saturated theme and also what some of you would like to see more of. Other than the extreme e.g vore, scat etc.

You should create an incest harem game where the MC, who has been away for years, is returning home from college/army/whatever after his father dies to visit his estranged, entirely female family and get to know them again. That one isn't overused at all.
Don't forget to have the likeable, well adjusted MC sexually assault them while they sleep with no repercussions ever.

Why sexually assaulting them while they sleep specifically? Like a corruption thing?
While true yes, I just want to get a feel for what generally people would like to see more of.

That's why if I ever decide to make a game it would heavily lean into the stereotype. At least for the main theme. You can avoid the other pitfalls but generally speaking stuff like the dead father is "over used" because people would just rather not deal with a living one in their incest story. Then there's the mean older sister trope, it's "over used" because it's a popular kink for that character type. What are you going to do, make the mother or the younger sister the mean bully? It just doesn't work the same.
A lot of people don't like waiting to get their rocks off (thus the peeking and sleep-rape stuff). But I'd rather have the story be more front loaded to build the characters and setting before any actual lewdness happens. The MC should have to work for it.Okay rape seems to be popular so far
Yes I do plan for you to have to work for it a little but still easy enough for one-handed gameplay lol
