The genre you're looking for is "roguelike dungeon crawler." These sorts of games have been around since the DOS era. You can find top-ten lists all over the internet for games that play very much like this one.

is generally credited with starting it all.Well, there's Pixel Dungeon and its many, many derivatives, the biggest and most popular being Shattered PD. It's a delightful little game that has a surprising amount of depth for its simple interface and a lot of replay value. The developer is very active when it comes to balancing and adding new content, having worked on the game for close to a decade (might be more, not sure). You can play it on both PC and mobile, though I definitely prefer the mobile version.
There's also Caves of Qud, but I found it a bit overwhelming with the amount of mechanics it throws at you, though if you're looking for depth, you'll find no shortage of it there. Bit on the expensive side though (30 quid) and the graphics might be not to your liking.

Thanks for all the suggestions. I knew a couple of those, but can't believe I had never heard of ADOM. It's already consumed quite a few hours since I bought it today

Tried it.
It's a... weird game, to say the least. Gets repetitive way too quickly, due to too few things being actually procedural.
Its only strong points are a possibility to play as a piece of sentient furniture, and utterly dope lore.
If my memory serves me right, of all roguelike oddities which were not mentioned here YET, ZAngband is worth checking for veteran wannabe-s.
And WazHack might spark some interest in people not quite acquainted with the genre. Most genre's staples are present, decent visuals, developer have good sense of humor. Moddable to a degree, no coding required.
Yo, could anyone point me towards some modding resources, or mods with relatively good/clean code?
I ain't any sort of programmer, so I'm kinda dependent on referencing guides and preexisting stuff.

Yeah, I've looked through them before but their methods all seemed to vary, and were a bit beyond my current familiarity; so for the time being I've just been modifying the code directly.
Though I just went through again and the Djiin lamp mod looks pretty promising as a reference; the code's pretty easy to follow, the comments are everywhere there needed, and it seems perform a lot of the same interactions with the game I want to; so I'll be looking into it.
I think the help I'd most benefit from would be an explanation how the game and mod talk, how the push system works, and what methods are available to modify the code already in main.js and text in Text_KinkyDungeon.csv if possible.
but I've not been able to find such.

Masda420 I heavily suggest you try pitching your mod idea and saying you'd like help in the 'modding-wip' or 'modding-general' channel on the Discord then to see if someone can help. Additionally if you make your own thread branching of the 'mods' then you'll have a dedicated space to nit pick around and such along with talking at length if those other two channels get busy.
The Dev themselves and Snoop (whom made the massive dump I copied on to here) talk frequently in those two channels so they'll be able to help you far more than myself nor anyone else on here that isn't modding on there already.
