you have Goblin Layer, but the only thing that makes him a knight is wearing a great-helm. Otherwise, it's a pure parody/comedy.
How "knightly" are you thinking?

Sir Stretchalot might be your thing if you like knights and mosnter girls. I didn't finish it as it's quite slow, but the art seems decent enough.
