SOrry, I can't give you any examples of games with 'good' 3d models in them and I have never attempted to do any type of 3d modeling, but from various conversations I have stumbled across over the years, the biggest issue seems to come down to money (and skill).
Pick your favorite modeling software and they all come with some basic models and anything 'new' or 'advanced' generally requires you to cough up some cash to purchase the latest generation models, textures, items, backgrounds, and anything else people create for those packages.

So, when you see someone creating 3d images that look ... not that great, they are probably just starting out and haven't spent any money on purchasing extra/new models and are just working with default/free things.
The 'good stuff' is usually created by someone that has invested the time and money into their software package, to be able to produce more 'realistic' images and animations.

There are a number of issues.
How much time are you going to put into that part of the body.
You see it for the sex scenes and maybe some others.

Then you have other issues. Guys like different types of pussies. Some guys like the girl who looks like she is a virgin down there.
Others guys like something that looks a little more warn in. But all of that varies from woman to woman.
If you google "female vagina photo porn" you will see a variety. Some will look rather fresh and others will look like your about to start an expedition into the grand canyon.

Then you have:
Hair - placement and making it look right
Moistness - This is where I tend to think a lot of issues arise. The skin is smoother often than other parts of the body so when it is made to look wet it looks more plastic than wet. It reminds me a lot of early 3d models with skin that got looked like plastic. People had to learn to adjust the roughness, reflections, speculation ... and so on to get it right.
