I’ve noticed a tiny amount of games that have an online presence which is weird cause itch.io is used to make a good chunk of games and yet no mirror is posted for us to play in browser. Why skip the easiest, most accessible route?

Because the need for a hosting server, what imply extra cost and a lot of technical administration, while increasing the security risk, is perhaps the most accessible route, but absolutely not the easiest.
