I'm curious if those five scenes aren't available by default or if I just haven't found the route yet.

You mean this? Those are just ending pictures for completing the paths (unlocking all the scenes).
You complete a path > New game > Complete another path > New game > ...
When you complete a path, the game will ask you whether you want to go straight to ending (first option) or continue with the game (second option). Continuing the game is a waste of effort as you won't have enough days to complete another one.
Unless your game is bugged (or perhaps you chose the second choice which I never did), I'm surprised you managed to unlock everything else without unlocking the ending pictures.
