Right off the bat, I can think of maybe two that sort of fits the "enemy turned lover" scenario.

I personally didn't mind it, but there are those who think this game is more than a little bit grindy. But I even welcomed the grindi-ness of it, because I thought it helped me grow that much more attached to the LIs. Anyway, you can either choose the "love/trust" type route and try to make everything as wholesome as possible, or you can enslave the girls. I've only done the love route, but there is one character who is first introduced as a villain. You can change her way by "training" her, but this is probably one of the least "wholesome" segments of the entire game. Still, you can try to be as understanding as possible while being strict at the same time whenever you have to be. Once she's completely reformed, she becomes very sweet.

In terms of wholesomeness, in my opinion this one is one of the best despite its general focus on incest. But in this case, it's more of a "bully turned lover" situation than a blatant "enemy". In this game, there is a particular character who is introduced as a very bad person. Not only has she bullied one of MC's half-sisters, she's also caused physical damage to a different girl (also an LI). Again, the method that the MC uses to "correct" her evil way is not necessarily something that I can comfortably stand behind, but it definitely changes the girl for the better. The tansformation is amazing, actually.

Probably the weakest "bully" of the three that i have been able to think of. Now, AlwaysFan is about a shy and introverted albino girl named Emilie, who ends up becoming a model on a website called AlwaysFan (fictitious OnlyFans)with the help of the MC. Because of her unique appearance, she was bullied a lot in school. This is a harem game, but one of the LIs just happens to be one of her bullies (there are several), although in this case, she wasn't the worst one.
I've only played the love/harem route, but the MC is depicted as this guy who has always been nice to Emilie, and the "bully" in question, named Cassandra, actually has always been a friend of the MC's while also been friends with the other, meaner bullies. So it's not as dramatic a transformation as the other two because, here, it's more a matter of peer pressure than anything else. Depending on the decisions you make, Emilie and Casandra may become close enough to where things get pretty intimate between them. "Bully turned lover", indeed.
