Also, the first machine has 16GB RAM with a maximum of 32GB and the second has 32GB with a maximum of 128GB.
Overall, you have much more scope for cost-effective upgrades in the future with the $1500 computer while the other one will have you wanting to upgrade much sooner but limit what you can do without also replacing the CPU and possibly the motherboard.

Also, the Ryzen 7 5700X is an 8 core CPU... which, if you want to use Blender, the company recommends.

Heh, yeah. Spec tables are like the Rosetta Stone. Now I know that I can read a tiny bit of Romanian!
I make renders in Blender. AMD 5600g processor, no video card. Pictures are of decent enough quality in 1-2 minutes. Because with the Denoise option enabled, 32 samples are enough instead of hundreds and thousands.
