I'm a huge fan of the witcher games, and the Witcher women are all beautiful! Kind of surprised I can't find much with them/in that universe haha. Are there solid Witcher-related works in any of the categories I mentioned above? Any help would be appreciated!

I don't think there are. And with the witcher, a hobbyist, not looking to make any money, could actually do it with the games assets. That's why there are so many Witcher related mods for Skyrim, they pretty much made that clear in their licensing agreement.
Can't find much? You must have never been to Rule34 site. Plenty of art (both 2d and 3d) and vids there.
