I'm looking for a dating sim type of game similar to Stardew Valley. Not the farming aspect but just how the world is built. The NPCs have different schedules, likes, etc. It would be a nice change rather than just a visual novel game where you just click through dialogue till the end. Any recommendations are appreciated!

Glassix is one where each character roams the map during the day. To progress their stories you often need to be in the right place at the right time. The Dating/Romance aspect is rather lacking though, and it's more focused on corrupting the girls with the help of a hypnosis gimmick.
Let's Go! My Harem Farm is pretty much a Stardew Valley Ultra-Lite, focused on getting most of the girls in town pregnant. You also need to take care of your farm to gather money to buy presents and the like, but the farming aspect is rather short and you'll likely be done with the game before the second season is over.

In general many of the games with multiple locations you can visit and NPCs having a schedule about where they go are tagged with the "Sandbox" tag. That may help you in finding more games you'll like.

Hmmm usually I'm not a fan of the RPGM games on here due to them being kinda lack luster. But glassix does look pretty interesting.
