I've had the feeling for quite a while that this was a game made to fulfill the creator and his friends's fetishes and just got popular outside that circle. Then it started making money so it catered toward more broad subjects for a while. Now, after having done 'enough' to placate the outsiders, they just went ham on what they really wanted to do. But that's just my tinfoil hat showing.

I RETURN. So you talk to him once, head back a bit before the shrine and go through a door and you'll be in a storage closet route. Get the totem after beating the gauntlet of enemies and offer it to the shrine to trigger the boss fight.

Honestly dont see anything bad with this if true, cause that means that his interest in project is not just monetary gain.

I beaten the overgrowth and all I get is some dialogue, I don't see a key or anything and the door is still saying it requires a key

I'm completely lost so to say

As ZeroT2 said, this game is very unfinished and levels just kinda end out of nowhere, without any cutscenes or much dialogue. Once you beat the overgrowth that means you completed the forest level, and more-or-less the same applies to other levels: the lab level ends after you beat the boss there (there's not even dialogue, if I remember correctly), and both the pizzeria and the farm levels are so unfinished that they don't even have a boss.
I haven't touched the daycare level in a long while (because abdl is not my fetish, so I played this level only out of interest to see how developed it was), but I remember that it got updated the most often, so maybe this level has a boss as well.

No, what the guy told was correct, getting a key and the offering are the requirements to accessing the fight with the overgrowth.
When you get to the boss arena, there is no boss fight, you see Milo (or whatever that farmer is called) and he tells some shit and gives you a key, after that you backtrack a bit and use that key to open the locked door, when you go through that door you parkour a bit and interact with a weird shrine-voodoo-thingy which is "the offering" that the guy was talking about. Once you do all that you return to the boss arena and only then you get to fight "the Overgrowth" boss.

I just go and fight with boss-Plant. I think its just mini boss, who drop key, and after this we go to make sacrafice...

Maybe I broke something because when I did it I saw the overgrowth boss and not the no boss fight part then lmao

The fuck ?! That has to be a bug or something, cuz I just tried completing the garden and everything happened exactly how I wrote in the previous comment: talked to the farmer (the exact quote that he said to me is:"Could you seal up those nasty spirits by replacing the offering at the shrine? Here is a key to the storage room in the cave, do be careful"), got the key, went through the locked room with said key, interacted with an offering and then I got the overgrowth boss fight.
That quote is literally what he says, It's physically impossible for anyone else to say it.

To be fair. Coffee save is still a bug so i don't doubt someone found a way to bug the plant boss into not registering properly as a boss for some reason, could be sequence breaking or some other problems. Either way if you fail to trigger the shrine replacement (and recieve the cutscene with sam and fox talking about how they need to teach milo a lesson) then the boss shouldn't trigger.

So in short. You probably have a sequence break issue where that save is now effectively bricked which isn't a huge problem because progress doesn't correlate to anything yet, so just do a new save and try and take it as slow as possible while performing the steps to hopefully avoid another sequence break occurance.
