If you're using Dazed's translation it should be fully compatible with versions of the game with the gallery. No point in using the dlsite version anymore, the quality is worse. I personally have Dazed's translation installed in version 1.04.7 and it runs without issues, and I have no reason to believe it wouldn't work with 1.05.1.
Is there a mod pack anywhere? To my understanding there are a bunch of mods that add individual encounters yeah? Has someone compiled a list with all of them together? Or do you just have to go around and look for every single one by itself?
I believe you might be referring all the events that the original game developer created after the game was released, in which case you can find them all if you go on their ci-en page and go back a few months. There are 10 or so if I remember correctly, but you're going to have to use another tool like MTool or Translator++ to translate them. Installation is pretty simple: just drag the www folder in, replace whatever files it asks you to, and load up the save that comes with each one.
If you're talking other mod creators, there is a decent amount of them but there's not really a centralized location for any of them. Best you can do is go on the original developer's ci-en and look at articles they've released because a couple of them shout out modders for the game. To my knowledge they've shouted out the modder that created the unicorn mod that is mentioned on this page as well as a mod that fleshes out the horse scene, a mod that adds in pigman and orc events, and a mod currently in development that adds in more BDSM/torture elements or something that's only available in Chinese.
I've never used a translation tool like the ones you've mentioned. Which is simpler to figure out?
Probably MTool. You just drag the executable file of the game onto the tool, run it, switch to the translate tab, and translate it.

That rule is bullshit though since they are inconsistent as fuck in enforcing it and pretty much abuse the wording of it to go after any loli content they personally dislike.

I may be stupid...but how do you trigger the unicorn event? The save just starts me before the horse man event.

Well, I haven't played the mod yet. I'm waiting for the weekend to savor it. I understand that in the same post there is a file... I think it's a txt where it explains the different paths.
