Is 2TB of storage enough for daz 3d?

Enough is an understatement. 2TB is HUGE. The core DAZ Studio application is just around 1GB installed. That leaves you a ton of storage for your assets. Heck, I only have 90GBs of DAZ products installed and 212 GBs of HDRIs from Polyhaven on my PC right now.

Are you planning on hosting your files for download? Seriously, there's no need to install everything since it will just slow down DAZ Studio (eg. morphs are a pain). I have 8,000 zipped backups taking up 700GB of space in my NAS, though.

Is it enough?
Depends.
How much stuff do you really plan on using? Because if you just want to download everything that looks mildly interesting and never actually use it, well, it won't be enough.
So it's better to have a general idea of what you want to do, then download accordingly.

2Tb for your working-on-projects drive is fine. But it's what papel said: if you're going to be downloading new assets from the firehose on a daily basis... you're going to want more off-line space before you know it.
