With full items, Irelia is by far the easiest to beat, second is Qiyana. Qiyana is a bit risky due to her loss effect and Ahri must be avoided at all cost if you ever want to win fights.
So basically: get items, farm Irelia's battle and level up some more. You'll need consumables to stop the bleeding, because if Katarina puts 10x stacks on you in the first round, nothing else can save you. Add to it a potion or two, and starting from lvl5-7 you will be able to beat her at the cost of 50-150 gold / victory, depending on your luck.

Talk to Katarina when she is practicing with it and ask to use the dummy in exchange for a favor.

I just went into www/save/data/weapons and changed my weapon's stats.
You can also change your armor piece stats in /data/armour.
Also, you can buy an item from mf, then change its price then sell it back for a lot of money
