Glad you enjoy it! I haven't dived completely through the entire game story wise but the gameplay loop was enjoyable from what I remember.

If you mean actively locking them up (More emphasis on locking up than training):
The Evil Guards of the Merchant City: Lady Prisoners Underground - You run around an area and do strip searches to find illegal items on a person to arrest them. (Not much training involved but you can interact with them after imprisoning them)
Stationmaster - You can imprison/purchase people and train them in different aspects but most of the training is dragging and dropping them into the appropriate module. (More of an afk trainer)
Goblin Burrow Games - General approach is about building up your goblin army, raiding an area, enslaving a girl and then using her to breed new (and hopefully better) goblins based on her abilities. (Not much training involved but there is quite a variety of characters in each of the games and they have progression for corruption once captured)
Games with more of an emphasis on training than locking up:
SoldGirl Town - You kidnap people who appear on a refreshing list and train them with a very hands on approach, having to balance stamina/mental IIRC. (Found the link to the game Soldgirl is one word apparently)
Games with a good balance of locking up/training:
Honestly I haven't found any with a decent amount of in between. Usually the games focus on one or the other. There's probably more in the training I just don't recall them off the top of my head. It sounds like SoldGirl Town is probably the closest one though.
