In this version (0.34pt1a) you can't up level more than 5 without save editing, and you can't run away from boss room, cuz maybe someone said that boss always push them out of room (if it read someone, who said that - don't be a pussy, don't hide in the corners , stay always on center of room, no matter what).Can level cap be increased to 10?
I know thisis a skill issue, but Oni feels way too punishing even with parries with a lv cap of 5. esp since you can't just run past her anymore like old versions(If there's a way to leave boss arena's before they die, I haven't found it, Tried every button when at the other side)
As someone who personally thought locking the door sides was necessary, there are two reasons. One, because for bosses like the Slime Queen and Oni, it was easy to accidentally dash out of the room when trying to dodge. And whrn you've just about beat the boss and you accidentally jump out to try and dodge or follow them, that stings a lot. (This was also before my suggestion to give a few frames of input forgiveness for the dash was added, so misinputs were likely a bit more common. I know they were for me.) I also think it should be there because...I mean, they're boss fights. It doesn't make much sense for there to be no punishment for starting a fight then walking out on it for finishing the job, so "locking the doors" once you've committed to the fight makes the most sense without adding some weird punishment for leaving. "Don't start a fight you can't finish" and all that jazz, y'know?(if it read someone, who said that - don't be a pussy, don't hide in the corners , stay always on center of room, no matter what).
What weapon are you using? Part of your issue may be using a weapon that's not good against her. And there are a few weapons that are FAR more effective for parries than others.Can level cap be increased to 10?

That's not entirely true, though I guess the bugginess with dashing past her makes it considerably more difficult. The doors only "lock" once you've attacked. That's by far the best one for her, so I unfortunately do have to agree with you, that's a MASSIVE skill issue. The timing is a bit awkward given that the startup for the swing is slow, but the hitbox for said swing is huge, so it should be relatively easy for you to parry her lunge and counter once you figure out the timing. Ding may still choose to up the cap, and I obviously don't think it's gonna stay at 5 forever regardless, but I do feel like deliberately adding another way to brute force the hard parts rather than encourage the player to practice and get better on their own as they play is a bit disingenuous.
