They had a small team working on this in parallel while most of them were finishing House Party. From my understanding it's gonna be using an updated version of HP's engine, so it's not like it was worth getting too much done on this until they have the updated engine mostly done.

You probably need to look again.

Doing this on an engine that was already behind the times when HP first went to early access almost 10 years ago is wild. I know it is Unity and all, but I am sure its capable of better models (including better animation skeletons, in HP they acted like wooden puppets) and textures than the screenshots are showing now.

Also, the only graphics option showing as "AI Quality" does not convey confidence.

Neat little customizer, I hope this will get expanded to characters other than the MC. Also, they should add a height slider too.
