I do not understand the point of those cards. They will not play any role in gameplay or narrative. She is releasing those cards as if those stats of the characters other than Lena or Ian have a gameplay effect. They do not.

It's just so that patrons can have something fun to read while she's working on the game. Supposed to help with the wait.
Lena is very similar to the MC in GGGB, so yeah you'll get all that (except incest). You can already slut her up by fucking everything that moves, I guess the hardcore stuff will come a bit later.
The relationship part seems to be focused more in Ian's part, as Ian needs to make several choices which potentially lock out many girls (although he might also have a fuckboy / stud route down the road).

Those characters also have a tightly-wound rigidness to them though, which Holly does not. She's just shy and awkward. The rigidness hints at an unquenched need for control, and she's lacking that angle. Not saying Eva won't write that in, but Holly doesn't totally fit the trope.

intelligence 4 and athletics 6 or 7... With the statistic "Lust" we do not know whether it is really good. She can tease, manipulate and irritate well, but maybe she is weak in bed.
