Well, the game portrays the lives of a group of relatively ordinary young people, with a female protagonist who at the start of the game works at a café and enjoys hanging out with her friends, playing guitar and working out, and is still trying to get over a bad breakup several months earlier. Considering the fact that only about two months have passed in-game since the beggining of the story, I'd say the best answer to your question "No prostitution? WTF?" is that it would be completely unrealistic (and also bad writing). People don't just end up in prostitution from one day to another if there's no preconditions for it.

Our Red String is a great visual novel, but the fact that you can't turn Holly into a toothless crack whore with depression and suicidal tendencies is indeed quite underwhelming.

A prostitute sells/trades sex to the customer for money, while porn/OF is watching other people have sex. So an OF simp get's no physical sexual favours in return for his money. I don't get the impression that it will be entirely the same, assuming the direction will at least be similar. Rather, I think the Seymour route will be less about sexual depravity and more about social dependence. Lena who leans Seymour's way could become a glamour model propped up by his money. He gets to appear suave and crafty while Lena gets to taste the good life, behind the scenes is an unknown but Lena might end up becoming one of Seymour's business perks, like, a business interest could be persuaded to work with Seymour for some entertainment with Lena? Lena might put up with being objectified like that if it benefits her, or if Seymour gains a hook on her somehow.
I'm not personally interested in the typical sugar-daddy themes, just sex for stuff, but I could find it interesting if Lena and Seymour were to set up more of a quid pro quo relationship where one gains by indulging the other in some way.
