It's considered a finished product. Toffi is just adding more features after release, which a lot of game developers do. The "demo" label is about the new content that is currently being worked on, but has been released as a beta version (named demo instead of beta) in its unfinished state.
Also the fact that the latest public version is labeled v1.02 points to it being "complete."
