I'm not sure if it's just me, maybe I'm getting too desensitized to the type of porn i enjoy, but it feels like there's a massive shortage of enjoyable games lately.
You've probably, like someone previously stated, just figured out your preferences and have (conciously or subconciously) expectations that get harder and harder to satisfy. That, or you simply exhausted the games available on here, as I'm fairly certain you likely also have/had older games that kind of interested you. Making a game sadly isn't just a one button click.

So much AI slop, i don't mind the occasional AI game but 90% of the AI games feel like they're extremely low effort.
I partially agree on that, but also don't forget that there's a lot of people just entering into it in the first place, with several of what I saw completely free to begin with - Yes AI in it can seem low effort, but everyone starts somewhere/somehow.

it feels like more and more projects are being abandoned by the creators.
Don't think it's really "more" than before - people previously have and most likely will, even in the future, continue to overestimate their capabilities or the expected interest in things.

I'm finding myself just skimming the latest updates for games i already enjoy and even that feels like a chore because half of them feel like the updates are getting smaller and smaller with each upload

When I do manage to find a new game I like the look of, I play though it and it feels like there's no content and then I just don't ever see an update
Updates for games naturally shrink in size, assuming regular updates. Additionally, many developers do it more on the side, if not even hobby-wise, so their available time might've just reduced or similar. (Not to mention potential burnout or whatnot, things happen).
But as games get more content, it will naturally be more work to test, fix and expand - especially for developers that have not had that much prior experience in completing projects.

This isn't a gripe with anyone in particular, I'm just curious if this feeling is shared among other people, or if I'm just less interested in things
My prior parts of this reply pretty much sum up what I figured out on my end.
It's easy to get into, find games one likes, find older ones one likes then get hung up on a waiting spree for the incomplete ones, before finding other older ones that one enjoys, just to then realize one has pretty much "exhausted" ones own current interest of what's available. So try other things which you usually did not have a particular interest in, or just give it some time for updates, new games, or your curiosity/interest to shift a bit, to enjoy more variety.
I was pretty hung up on a specific aspect for games and quickly exhausted my interest back then, replayed the old ones several times, before actually being interested in other aspects. While I don't care all too much about the graphical aspect, I do enjoy various systems in games. (Like, just weird combinations which I found interesting being implemented for games - which you rarely see in "non-adult" games as people take less "risks" there, or I just haven't found a place where people really tend to upload their weird combinations aside of itch (which I find hella difficult to find something that makes me think stuff like "Eh, that combined with RPG elements?" or similar.))

TLDR: Overall, fairly certain it's less that the quality overall drops and probably just that you exhausted the available ones on here for your current interest in porn/game aspect with an expected quality of your desire.

In my case that would add to the "AI-slop" - My art skills are non-existent. Well that, or I'd use some kinda other standard stuff people don't like to see either. (default assets, overused free assets or similar)

I don't think people using AI to compensate for some area where they lack or don't have money to buy better stuff in is 100% fine. :)

If you have a passion, and an idea, use AI to make it happen. I think where people are most upset with AI usage is when it's the 500th phone NTR AI CG clone that has almost no effort put into it but is paywalled and already on a Patreon. If it's a blatant cash grab it will be taken less happily.

But passion projects... by all means AI it up! Make your dream happen! <3

Dont give em ideas. This is probably the reason why there's so much low effort garbage on the site.

I still remember when we had good games like... Strip poker and... MnF games.
