While the game certainly has a lot of rooms to improve, the reason you can't beat this boss sure doesn't have anything to do with how it was badly programmed. As others have said, it's mainly skill issue on your part. You say the game tried too hard to be hard when literally every ennemy in the game, except for the boss, can easily be 1-shoted. Your character is slow, but so are the ennemies, it's fairly easy to telegraph incoming moves. From the picture, you're currently playing the latest v0.1. The boss in this version is a nerfed version of v0.0.7. I made a video demonstration on how to deal with each one: In a old post for v0.0.7
Unless one's brain is fully powered by porn, I don't see how people are finding this boss impossible. Sure, it's a hard boss, but not to the point of requiring legendary gaming skill to beat. I've seen some wild takes saying that this boss is harder than most Elden Ring's bosses and... I honestly cannot fathom the reasoning behind this. Compared to all of Fromsoft's games, this boss is like baby difficulty. The reality is, most people who come to these porn games are there for the porn and not to play a game, hence the complaints when faced with a certain degree of difficulty. To these people I say, find another game. Not all hentai games are mainly porn, some focuses on gameplay, some other on story. Nothing wrong with any of this.
look back at the video holy the dash in this game is so unfair. It's instant, long distance so you can get out of enemy's attack range, can phase through enemies, and i-frame is huge.
You see people ranting about the last boss but never about how everything else is tough because how strong the dash is
If the first boss is that "difficult", i wonder what would they think if the next boss (possibly the Female Shrine Maiden) is more ranged focused rather than melee focused.

I've made a simple python code (not yet tested) that will generate a padded sprites so that it's easy to make an animation with it (fix alignment problem).
Only problem is the time each frame is running is inaccessible, so I have to record the gameplay and manually time each sprite.

You can't double jump to begin with.
To be able to go higher you'll need to find specific platforms and props that does that.
Currently in this patch V1.0.0, there is only 1 platform and prop that does that.
