Virt-A-Mate is not an engine.
Virt-A-Mate is made with Unity Engine (C#), while this here is made in Unreal Engine (C++).

There won't be any possibilities improving the performance by yourself, exceptions made to given graphics options or regular engine.ini and so on edits.

The 2.2 update is delyed for a week. Look at official VR Stallion SubscribeStar channel.

We may even be able to ride horses, but I think developers implied by last update mounting horses: not "riding" in context of this game.
