I don't think there's much difference between those versions.

The one with glaring differences is Steins;Gate Elite because it removed some scenes and content that weren't in the anime.

Whatever version that you play, it's recommended to install the unofficial Patch from Committee of Zero because there are some terminologies being adjusted and appropriated to make sure the game would fit the rest of the SciAdv series. Also there are various improvements being thrown in.

It's best to keep in mind that the vanilla release of Steins;Gate was made without any real direction to bring the rest of the SciAdv series to localization.
