As an example, some older Illusion games had a mechanic of watching the girl's response and then adjusting speed, power, smoothness, etc. of the mouse input. Those games required some skill in order to succeed and advance.

Is there a label or tag for this kind of game that I can search for to find similar games?

Yeah, I see a few that might be examples under "simulator", but it seems like a lot of other things are considered simulators as well. I'm seeing the term "real time sex scenes" on some descriptions, which seems to be in the right direction.

There's point & click, but it can be used for controllable sex scenes or just clicking around a map. Also trainer games will often have a similar mechanic.
