How do you peep on her in the shower? All the other actions in the washroom work, but clicking on/around the door does nothing.

You don't need to press the "door" itself. But You need to press the round button with an eye, it's above Imouto's head on your screenshot
When you hover your mouse over Imouto's silhouette, Imouto's current status should be displayed. If the blue "alertness/sleep" bar fills more than 60% (approximately), Imouto will detect you, the door will open, and the scene will end.
To reduce detection, you need to increase your breathing control level (ninja skills). Need to increase as well affection to you (red hearts and maybe purple hearts too). You can also increase tolerance for harassment (reducing the alertness bar) by groping Imouto while she's playing video games.

What version of the game do you have and what language is selected in the settings?
My game updated automatically to version 0.82F, chosed English language. Peeping while washing and peeping while taking a bath both work.

Someone please give me detailed instructions, I have 6 red hearts but I can't get any purple hearts. Even when I peek at her bathing or harass her to get over 100% at night, I can't get purple hearts.
I once fed her pink candy but the result was she got over 100% then dropped to 0% without getting anything.
What did I do wrong?

You have 6 purple hearts based on the screenshot you attached. The difference in color between red/purple hearts is small.

There are many triggers for the protagonist being caught peeping.
First of all, pay attention to the shampoo percentage. If it's at 0 or close to it, Imouto is guaranteed to come out to get a new one. If Imouto's affection for you is high, she'll scream from the bathtub asking for a new one.
Secondly, there are chains of events, with some variations, and they all start with the "zero/first" "catch" event. Later in the story, you'll be met with taunts sympathy: "And I noticed you again, how careless you are." Even if you're a god of concealment, a zero/first event will still get you no matter what (you should "forcibly" be caught three or even four times and expelled under different conditions; repeat the same process the next in-game day for up to a week straight).

If you or Imouto have low certain stats, there will be no success until you improve those stats.

In theory, after clicking the "eye," a choice of two options should appear on the side: a red one for "peek" and a white one for "change your mind."
If you're too distracted by Imouto's breasts while she's showering, you won't be able to peek at her in the bathroom either (or rather, you can only peek at her breasts once and then cancel). If you want the bathroom scene, wait until Imouto's silhouette disappears, and don't peek during the shower scene.

The Star Gate is from the red door you can summon in the dungeon by pressing B (I think that's the keybind) or by using The Star tarot card.
I cannot; clicking on the icon does nothing, as if there is nothing there. The other icons in the room work. I can double-check later to make sure I'm not misremembering or going crazy.
I'm pretty sure I'm on 0.82F. I downloaded the game from the OP the other day, and on the first launch I got a pop-up asking me to patch it. I'm playing in English. Again, I can double-check later.
