I mean Rick can't skip all dinners the main reason he even fell in love with Kate is likely because he wanted to escape the Vegan hell.
Never saw him eating or ordering something else beside wine and beer. Still, there is a chance he might eat some meat by ordering some perpetual stew.
If any soldier would act this much out of place all soldiers would be banned from leaving the camp ever again... not to mention that even Thomas couldn't maintain a business if he allowed something like this happen... a broken nose or arm is still acceptable... a killed local would be the end of it...
Soldiers back then were not soldiers today. Back then looting, raping, killing were thier rights. And punishment for such a behaviour, like killing a simple peasant, would depend on his commander character. Flogging, execution, starvation or maybe... nothing at all. Still, it's a royal army, so I think there is at least some form of discipline, so it would be the first one if not the second one.
Still, it's not impossible for such thing to happen. After all those soldiers are drinking huge amount of alcohol every night. It only require but a one drunken enough hotshot with anger issues for something bad to happen.
As for Thomas... I don't think he would care very much if something like that would happen, but would certainly try to stop from happening, because he would have to get everyone out, close the tavern, explain everything to guards, then get rid of the body, clean the floor, make a complain to Giron, etc. He won't ban soldiers, because they bring him a lot of money. Still, maybe he would allow them only without weapons to avoid such incident to happen again. But I don't think soldiers would agree to it.

While unlikely in medieval society, but veganism doesn't prevent you from being muscular, it just means you have to pay extra attention to your diet. There's plenty of vegan body builders.
As you noticed, very unlikely in medieval setting. Back then food was food. Poeple were eating everything, because it was either eat what you can or starve to death... Or eat what you can and still starve to death, because there is not enough food to feed everyone.
Today bodybuilders have access to every single piece of knowledge due to internet, nutritionists and many supplements to substitute lack of vitamins and other nutrients they lack due to vegan diet. Back then people didn't have such knowledge and technology.
Still I find "not eating meat"-ism just retarded. I can give my body what it needs with a single piece of meat instead of wasting my time trying to work around it. Just as my friend is saying "If God would want for us to not eat animals he would not have made them out of tasty meat".

Which is why i said it was more unlikely, not impossible but very unlikely. If you only ban meat and fish, you still have plenty of protein sources like dairy products and peas and beans etc...
They wouldn't be looking for alternative protein source at all in the first place, because of the lack of knowledge about nutrients. As I wrote food was food. They were eating everything. Denying certain food source was only for the rich and noble few.
Still, I am a bit suprised there is no fisher(wo)man in Arenfield, as there is not only a river passing the village, but also a lake nearby. Some fish would be a nice variety to constant meat eating.
Well... in Arenfield they don't have Hens, nor cows and there are no peas or beans either... so...
But there is a certain bull running around the village being milked by every girl.
