I think back when this game still in early stage, I can see the stat tracking ( Lust, morale something like that ) when I'm on menu. But after I plays it again ( v.90 ) the stat tracking in menu is no where to be seen? is this a bug or the dev removed it? How do you guys keep tracking morality and lust stat?

You don't have the latest version (the one with the save fix). The stats weren't showing in a buggy version which is the one I assume you have.
The version at the OP is super buggy, this is the version that you should actually be playing:

It shows the stats in the main menu and it fixes the save bug.

To be fair its 3,700$ Pre Taxes and split onto several people. I dont think a single dev/artist lives only by that project. Theres other Projects like Summertime Saga which make almost 40k spllit onto 4 people (i think) and take several months for new content aswell. I think the progress of Fleeting Iris is totally fine for the amount of money everyone of them makes. Its more like a part time job for them.

Starke said multiple times on Discord that the other previews are almost finished and what they are missing now is expressions but the outline and coloring is finished.Is it just me that thinks this next version will be delayed ? Only 8 spoilers are shown as of now and no release date are given yet.

I think you can do every single one except family, garcias and clarke, all at the same time. All of those seem to be exclusive and you can't pair them with any other route.
Melvin's only splits right near the end but the walkthrough is quite detailed and updated:

I checked on the walkthrought but i cannot find any info about that: how can i unlock the gym/swimming pool events? Every time i try to go there she says "I have other things to do now" :/

Starke just told me on discord that it will definitely be in February but they don't want to release a date to be sure they won't msis it. The last two years they missed at most by 1 or 2 days so speaking from experience I'd say it's safe to assume we'll have the next patch somewhere in the next two weeks.
Advance Melvin's route until you get the decision to be loyal to Melvin or not, that's when I noticed I could go to the gym.
i just hope we got new update for gracia route cuz i wanted to see what happen to our Char after the last update
I presume you're asking about the h-scenes, IIRC no they're drawn not animated.
