This really needs to be explained in game but you do level up, you just don't get any benefit unless you spend the points they don't tell you about. Click on the character portrait at the top left hand corner, you'll find the points in there. From what I've seen and heard, just increase your strength.

It also increases health points and ecto-points to conduct more special attacks as well.
You are right though, there should be a tutorial in episode 1 to teach you this stuff.

Hey guys, I've played this game the first versions and then I got bored by the lack of content with the main girls, but always saw potential in it, I'd like to give it a try to the new version. Can anyone confirm if there is any sex (at least BJ content) with Maddy at this point of the game?

Episode 6 is focused on Maddie and has really great scenes.
In Episode 7 you can choose to start a quest that unlocks another.

Fuck that Dragon fight I played from the begging and that boss fight just isn't fair
I managed to beat it both times by save scumming until it goes invisible which I never had to do for the other fights

Should be turned straight up into a VN. Game progression is linear and the combat unnecessary, you'll either win easily because of the plot or lose until RNG blesses you.
