Depends on if you want it to be similar to the last game you played, or the last game you started I guess. Well, it has to be one or the other, and last game you played avoids the situation where you start a game as a man, start a game as a woman, then load the save as a man and just play that one. 99% of playtime could be as a man, but the female save was started more recently, you know...I want it to be both
Also, I'd suggest wrapping all the name, gender and pronouns in a 'pc' object, then you only need to pass that one thing into the scope for the replay, rather than a long list of loose variables. I think Ren'Py can call object fields like
[pc.name] as well as loose variables.

Yes renpy, or better python can call objects, but I'll have to look into it.
What I'm going to try is to use the last game played andif there are both gender variables, make a simple choice.

I think it's just as simple as setting fields on the character object, like:
