There is currently nothing in the game, nor any mods, that allows you to add custom NPCs, though I've enquired with LubricatedKitty in the past and they've expressed interested in developing one!

You can just take a preexisting NPC and use cheats to turn them into whatever you want. Then watch as their existing relationships break down because they're no longer compatible, and the sensation that some fundamental part of themselves they truly valued has been lost haunts them forever!*
*existential dread hasn't been added yet but it's on the roadmap.
Am I correct in understanding that there is no opportunity for meetings with The Esports Coach? Unlike professors, there is no opportunity to get his phone number or sit with him in The River Rat.
If I remember correctly, relationship with the staff, besides your professors, is still very limited
I'm a bit surprised there's no storyline with the coaches tbh
Even the professors don't really have too much going on.
I will say, it's nice that the mechanics and stuff are being put into place, but the game is still not going anywhere just yet. Don't get me wrong, the stuff being added is really cool, but it only really adds so much. It really feels like a lot of the currently enabled storylines need to be sped up a fair bit. The roommate's partner stuff, for example, feels like the sort of thing that is meant to take the better part of a whole in-game year. The DND stuff takes most of a semester as well. There's nothing wrong with that, but there need to be more short term stories/events. There's all these special characters that don't have a whole lot going on and need something.
I think I should clarify that the point of my question doesn't go beyond “is there any way to have sex with coaches from the ones available to professors (phone number, bar conversation)?”.
I'm also curious to ask the chat room if relationships with members of opposing teams would be reflected in any sport. I highly doubt it, but maybe, just in case.

I don't think it's in the game yet, but I will go down in history for having impregnated an entire opposing team.

I think you're starting from a wrong point.. opposing teams are just the ones you will play at matches..
Other clubs in the FKU are just different students with different passion from your..
Either you can change club at any time (2 weeks cooldown) or every year..
