As for removing non-binary content, there's a slider when you generate the world that should reduce certain populations, but to remove it completely I think you would have to modify the game code. Not sure it's worth the time, honestly; if you don't like somebody's gender, you can just not have sex with 'em.

I feel the roommate should be adjusted to whatever the player sets the school as, since you can make it all female besides MC, then the roommate should also be female, and vice versa with male if all the school is male.

You got mods for that..
The Dev team choose RM will be the same sex as MC cause that would happens in any situation you would need to join one in a structure managed by others..
Sorry that's hurting your feelings, but would hurt many more otherwise..

They have a specific storyline but are otherwise bound to the rules of the rest of the NPC's, unfortunately. So If you've built enough negative friendship with them, you might get a rival event. But I agree, maybe specific NPC's like the admirer should have these events not trigger for them.
