They've mentioned that they plan on continuing to work on the vampire storyline after the main storyline is finished. So when they say "finishing the game" they just mean "making the game playable from beginning to end". I think they even indicated that they may continue adding side missions to the main story, but I may have jumped to conclusions there.
That's also my take on it. As far as I can tell, there have been quite a bunch of contracts and side missions, and that's not even counting every single bad end scene (mentioned in MKRU's latest weekly update) you can encounter. You can
technically see all scenes by saving like crazy and keeping save archives, but many are influenced by prior choices too.
Really love that magical little thing with every single enemy having their own scene. It dates back to RPG Maker 95 and losing to zako going "how the fuck did I even win?" on you, only to get either a comedy gold or pixel art H-scene with dialogue afterwards before the game over/auto-revival/back to last save point. It *really* increases playability (as well as replay value in some cases) by a damn lot.
With modern engines, RPG Maker is much more lenient so you can also add absurdly high resolution pictures and even full movies. (I still prefer the good old pixel art thing but hey, old people like old people things.
