I would assume it would be a complete pain in the ass to go back and re-do the scripts into a single quest without making the RPGM engine shit itself and break anything while at it for something so minor. At best, the devs could do that in future quests.
I assumed it would be something of a pain, but the quest clutter does bug me, especially in cases like Brenda's where there was an obvious placeholder quest put in at the beginning, presumably with the intention to be filled out later. Breaking the family storylines into multiple quests is much more tolerable, given how much more development they get and how they interweave.

I would agree that losing weekends can be a bummer because you have to wait whole weeks to do any quests in those days (I particularly remember how much time skip I had to do for the Brenda quests because I decided to start her storyline when I had no more quests left) but I don't remember any game over state in the game no matter how much Lilith babbles about it.
Oh, I'm not worried about getting a game over, it just strains my immersion! There's a reason I framed these as "quality of life" wishes—they by no means ruin the game for me, but they could make it even better.
