Is there a way to, remove a "Crest" from a character ?

Don't think so. If you mean all of them or directly, but:

Is there a way to, add a "Crest" of "your choosing", to a character ?

Build Mental ward.

You will have slot(s) under Hypnosis subject which lets you put mantra on character. Character can have 2 of them.

Each has -2 to all stats, some stat changes, +10 per day growth to specific crest, while all other diminish

For example:
Mantra of Agression
all stats -2, +30% damage, +10 per day Crest of Lust

Mantra of Growth
all stats -2, +1 move slot (+1 skill memorized to use in fight, you have limited number of skills to equip), +10 per day Crest of Desire

Is Vian's unique hair removed somehow? Because i had a full rubber mask on her and when i removed it i noticed her hair is replaced with the default bun hair, and im not sure how to change it back either through the mod modifier thing or the debug or just in game. how can i change it back?

Any mod that reworks leveling up. By default goals can require you to play badly like putting mages in the front slot where they can get obliterated or completely luck based like getting a parasite infection.

I don't think I had any parasite goals besides "kill parasite" yet - wouldn't goals to grow a parasite also be fulfilled by getting them from the seedbed in the nursery? Or are there also goals like the quest that requires a natural parasite?

There are end dungeon with parasite goals, but unless things have changed, you can just BYO at the start. (Still sucks in early game before you get nursery.)

Yes, if you are willing to pay $1,000 gold for a parasite at the nursery the "end dungeons with parasite" goal is trivial. If you get an anal parasite you can even farm free natural parasites out of it, but you may not want to do that since skipping your turn to spawn a parasite is very damaging in nontrivial combat.

Seems quite interesting, but it throws at you too much info without decent tutorial at the start of the game. My brain just gets overloaded by trying to understand all those 50k different statuses, mechanics and small icon thingies. Wish there was video tutorial explaining things without need of reading 100 page manual to understand the game

it's more of a "if u played darkest dungeon, this is ez pz"
you can kinda tell what is good and what is bad with minimal effort if you've played the game this is based on.

When I hover on the skill I see effects icons, but if I don't understand them, can I somehow hover over them and read them (for example holding some key?). Because when I try to do so, window just disappears. For example how can I read what this bust image means in red arrow(outside of moving to encyclopedia) when my cursor is at blue arrow?

Hint noted brother. I read the short descriptions, I just didn't immediately understand which mod exactly done that, it wasn't very obvious considering that I was playing the game for the first time, but I wanted to get the maximum experience.

No idea. Search this thread for "console" and it should come up very quickly, especially if you set the search options to "Most Recent" in your profile's preferences.

Common consensus ist that unless you're a Darkest Dungeons expert, doing your first run on a heavily modded game will suck balls so hard it really isn't recommended. A lot of people feel it's probably better to stick with a couple of fairly simple mods even if you're a DD guru, and those status icons you don't know anything about are absolutely not from a simple mod.

That depends on the mods, like races wont change the difficulty, nor will most of the bulk item mods. The leveling mods will but are generally recommended, and things like a hope of recovery or bunny class node are also fine and wont really change your runs.
Some mods change the balance a lot, but I try to keep mine rather balanced.
