Using the attack performed by pressing 5. It's an attack you can't do while moving and the damage is based on your Alure stat. Then press the interact button over the enemy.
So the gallery works by recording what player have met and unlocked, not by listing all options and give each of them a boolean value, and there is no way I could guess out what string developers used when they coded this game
I haven't played the game through in this version, and I don't know is there something I haven't discovered yet or it's just the game has a bug

Being on top is great but you get debuffed for it why ? And the santa dress that can't be combined with the bunny pantyhose or yoga pants is a real shame.
Also the pantyhose with the Santa heels get messy too the former ends up on top of the latter same for the cheerleader socks.

Yea i saw them locked as well, i tried by unlocking all the scenes in the gallery but it didn't do anything

This game is amazing. Love it. And the constant updates are more frequent than I'm used too. The animation of topping the first girl has me super excited to see more animations. The stills are great, but don't compare to animations. Fantastic job.
Bugs.
I've encountered a bunch of bugs and exploits.
- I topped the rodeo girl and the scene never ended. After 5 minutes, I just exited to main menu.
- I topped another girl and after leaving, I lost the ability to use any of my keybaord keys. I couldn't cast spells, couldn't open inventory, nothing. Also the spells were gone on the ui.
- At wave 5, the head set appears. If you grab it, then go to town, come back, you can grab another head set, and another, and another. I farmed the headset and sold them all for a butt load of gold.
I encountered these within 20 minutes of playing, so I guess they should be easily replicated to spot and fix.

Bro, just play the game, it's easy, but if you still want the gallery, there's a mod that helps, I'll look for it here.
