Given the amount of stuff that's been added and how it fits together, honestly, I'd personally say go with the latest version. Between all the versions of the remake, not much content was removed in the transitions. That said, I do have a few tips before you begin.
1. Change the engine's language to Japanese if it isn't set to that already. This is doable through Settings in the top left corner.
- If you need help navigating this part, I'll walk you through it, but it shouldn't be too difficult to find assuming everything works as intended. The reason you need to do this is because a lot of the in-game text won't show up if the engine is set to English. Don't worry though--in-game, you can change the language to English anyway, so you won't have to be pulling up a translator.
2. ESC changes window size, F5 reboots the game. Save data is sustained when you do this.
- In order to actually close the game, you have to close the window or end the task. A little extra work, but nothing too bad.
3. Shameless plug, but use the guide I have linked in my signature. I promise it'll be worth it.
- I do suggest that you fuck around and find out things for yourself to have as much fun as possible, but if you're every stumped or think you're missing something and can't put your finger on it, everything you may want or need to know about collectibles and captures is in the guide, as well as a few little gameplay secrets.

OS > Users > (You) > AppData > Local
Find the version of the FOBS folder that matches your current build and replace the save file inside. You can also import saves from previous builds.

Why download the other versions?
Everything that was in the other versions is in here.
Unless you mean the old builds A and B.
If you never played fobs before, start with A then finish B, you will have a basis for the remaster after that.

I'm sure you already started the game and saved at least once so those folders are created. If you did and yet they are not created then maybe something on your device is stopping the game from creating them. If somehow they are being stored somewhere else (which you can confirm by checking if you are able to load the game) you can try a Search app (like UltraSearch) to find them.

I guess that may happen at some point during the development process (unless they get removed), for context the same happened during the development of the Original version of the game (some enemies never got added to it because the development was interrupted before the game was finished tho).

If they become enemies you can fight and capture, they'll be moved to the gallery. Anything not in the gallery can't be captured yet. So all of those enemies will likely be capturable at some point, at which point they'll be fully integrated into the gallery.

As Kisama said, if you've started the game already, the folders should be there. If you have started and they aren't, figure out where they might've gone. If you must, you can use the search function in File Explorer to find all instances of .json files and see if you can find the save file that way.
