Could you tell me how to get the maximum number of LIs in one playthrough? Which LIs should I turn down without negative consequences for the other LIs? If I agree to be Lucy's boyfriend, does that close the door on everyone else in the family, or can I dump her later without consequences for the sake of my daughters or their mother?

TL;DR: Yes, but it's best to wait until the next update (v0.16.2 [Rework]) is released.
I've tried to keep the pathing as simple as possible. Once you commit to one love interest, you're essentially locked into their route and the others won't be available.
The only exception is Lucy and Charlotte. You can be on both of their paths at the same time, but you have to choose between them before Lucy's first intimate scene.
So yes, you'll want separate saves for each girl and avoid showing interest in the others. But I'm currently reworking things, so you should wait until v0.16.2 [Rework] has been released before starting a new game.

Both Lucy and Charlotte are brunettes. Lucy dyed her hair and cut it short to differentiate herself from Charlotte after constantly being compared to her unfavourably.

Since Lucy's change of hairstyle was a reaction to living in Charlotte's shadow, reverting back to her natural long brown hair would symbolize her overcoming that insecurity. So it is something I thought about doing.

But making such a big change to a love interest's appearance is fraught with danger for a developer!

Yeah, we can be a loud and obnoxious bunch. Take the easy way out, show her a couple of years later in an epilogue with her natural hair worn long (if she's with the MC - bald if not).
