Well if the slaving aspect is what you want, there is Stationmaster.

Maybe Red Sakura Mansion or the fan-made Renpy version.

I'm gonna throw Ataegina out there too. It's really an entirely different style of game so it doesn't have any of the slavery/training aspect but it might be good if you like the aspect of combat and becoming a powerful magic user.
