I see people asking for the DLC to be updated above, can anyone confirm that it needs to be updated? I know that In the Grip of Ice was just released on Steam, but is it a newer version than the 2.0 version that's here?
yeah, the game hasnt been updated for packaged dlcs together with base game.

each of dlc is their own separated ren'py game. merging them will brake the game
They have a 'skip' button for the mini-games, but not for the shitass combat that is way more tedious. This halloween DLC doesn't have the cheat sword, either.

Is the game playable on the "tactical" difficulty, or is it some kind of sick joke?
Everything is hitting harder than MC, healing in a tavern costs a lot, potions cost an arm and leg and there is no source of income (hunting wolves is a loss since healing costs more than loot and hunting boars is broken or something, they just run away every time).
The level-ups seem to be useless in combat.
I have completed quests 1-5, 10,11,19,23; have 150 HP and less than 200 gold at the moment. The guy in the elf girl's room, two bandits during an ambush, the centipede in the cave, and the bear just rip the MC apart (even fully healed) and there are not enough potions to survive (healing card is unreliable and RNG seems to be on the enemy side today).
Is there something that I am missing that can salvage the situation or am I already soft-locked myself somehow and it is better to drop and just start over on the 'story' difficulty?

yes.
well, you can sleep outside and save scum if you Really need to save gold. You can try to hunt some boars for money. You should already have "dress wounds" so that you can somewhat recover during battle. Once you unlock circle of power, you would be able to raise your card power and actually be able to recover in battle. I had actually written a guide to play on that difficulty. Mostly for linearly getting equipment upgrades. One pretty much don't need to buy any potions or even use them most of the time. Upgrading your weapon immediately is probably the most important item, which means buying an oak bow. The guide can explain it in more depth.

Is the Treant fight in the forest just bugged? I can kill the tree just fine, but the plant is immune to anything and I just sit there or run away. I can't complete the contract and it's annoying the hell out of me.
try hovering over the status icons. If I recall correctly, it may have a damage immunity. Some enemies do have such and can only be fought using either ranged or melee.
Ty, I swear I tried doing it with the bow before and it just did nothing like with the sword. I think I read somewhere else that having autoplay on messed with it too so maybe it was that as well.

DLC's are standalone with there own stories
nothing from main game transfers to DLC and vise versa
the DLC's give you everything you need for there respective stories
the DLC's can be beaten in a few hours and are way more simpler than the main game, with less bullshit as well
NOTE: DONT PLAY THE HALLOWEEN DLC IT IS A MUCH OLDER VERSION OF "BETWEEN LIFE AND DEATH"
