Well, for one, I'm glad there are different markets for different people.
As for me personally, when it comes to (eastern) porn games my experience is not that dissimilar from yours but that may be because most of the games I've found either came from (now deceased) HongFire or this website. Sooo... it's a narrow scope. Let's be honest, F95 is filled to the brim with similar-looking and feeling RPGMaker games and many of them tend to be grindy as heck to inflate play time and to give some sense of gameplay. The thing that bothers me the most is the combat. I'd rather get down to the meat and bones of the game, which is the story and sex... and that's where novels (kinetic or otherwise) come in.
I don't mind kinetic novels but my tastes change over time. Sometimes I want something that focuses on story and other times I want something with a bit more of player agency. Fortunately, this website has tags (even though they aren't perfect), so I can just pick and choose what I want and avoid the rest.
If we're talking about non-porn games then the eastern market has definitely some good titles out there, kinetic novel or not.
For a moment there I thought you were saying most of these (indie) games were AAA, but then I realized you meant how most AAA games nowadays feel unfinished when they release. I agree. Though, when it comes to bugs, it's unavoidable with how varied our PCs have become and the amount of hardware there is out there.
I feel like the eastern market sticks to consistency, which is what you seem to prefer, whereas the western market prefers to expand and do things different every once in a while. Personally, I think it's a commendable effort. Games aren't exactly cheap to make so even if it doesn't pan out at least they made an effort to cater to different crowds. Simulators are turning to be some of my favorite games right now, titles like House Flipper and PowerWash Simulator. Nobody would have thought of making games like these 10 years ago.
